Harvard University Dining Services was able to reduce overall sodium levels by 30% across their menus, by altering the salt they used. In all kitchens, Harvard University Dining Services replaced their traditional salt with Diamond Crystal® Kosher Salt, which simply by its molecular construction, contains half the sodium per teaspoon as a traditional table salt.
